Veraison continues at a rapid pace with most varieties nearing 95 to 100% complete. Cabernet Sauvignon is still lagging with only 20 to 30% veraison. Veraison is the transition of the grape from the growth stage to the ripening. 

  1. Color changes – red grapes – green grapes turn red; white grapes- green grapes become somewhat translucent

  2. Sugar accumulates

  3. Acid decreases

  4. Berries expand and soften

  5. Seeds harden

The hand crew is working in the production blocks making sure the grapes are uniformly spread dropping any grapes that are clumped. The equipment operators are preparing for harvest by attaching the picking heads to the Pellenc tractors and making necessary tune ups, while in the winery, final equipment preparation is made and supplies are being ordered. This week our 1st samples were taken in a few of the early ripening white varieties. The Sauvignon Blanc was at 17 brix. The question is, can we wait to pick until after the Labor Day weekend?
